The fig tree is commonly found in this area and is an indication of the fertility and productivity of the land.\u003c\/p\u003e\n\u003cp\u003eSmallholder farmers bring their finest ripest cherries to the mill where they are washed, sorted and dried on rasied beds. The peaberry is a natural occurring mutation of the coffee cherry where only one smaller rounded bean develops where there would usually be two flatter beans. The separation of these beans allows for a more uniform roasting process, which of course we love.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe peaberry occurs when a cherry only produces one bean instead of two, thus creating a smaller, rounder \u0026amp; denser coffee bean. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThis is a really juicy \u0026amp; full bodied coffee with notes of cinnamon \u0026amp; honey. There is a nice acidity with a brown sugar, toffee-like finish.
